Some Like It Hot Chicken With Corn Succsatash

I had a craving for wings from a nearby eatery but opted to whip up a wholesome alternative using the ingredients on hand in our fridge and freezer. We had some juicy corn on the cob, various peppers, red onions, cherry tomatoes, and fresh cilantro. Hot sauce and blue cheese are must-haves in our kitchen. The dish was simple and fast to prepare, and I definitely plan to make it again soon.

Corn and Pepper Succotash

  • 3 Ears corn off the cob
  • 5 Mini sweet peppers
  • ½ Red onion chopped
  • 1 Jalapeno (optional)
  • ½ Red onion
  • ¼ Cup chopped cilantro
  • 2 Tablespoons olive oil
  • 7 Cherry tomatoes cut in half
  • Zest and juice of one small lime
  • ½ Cup chopped cilantro

Some Like It Hot Chicken

  • 12 oz Chicken breast cut into bite-size pieces.
  • 1/2 Cup hot sauce
  • 1/2 Red onion chopped
  • 1 Garlic clove
  • 1/4 Cup cilantro
  • 1/2 Cup blue cheese dressing or dressing of choice for dipping.


Preparation time - 20 minutes Cook time 15 minutes Servings 6-10

Corn and Pepper Succotash

  1. Cut off the kernels from 3 ears of corn and place a shallow bowl underneath to catch them. This will save time.
  2. Thinly slice 5 mini ripe sweet peppers or 1 large bell sweet pepper and 1 jalapeno (optional)
  3. 1/2 red onion dice
  4. Season with salt and pepper to your liking.
  5. Heat 3 tablespoons of olive oil in a large sauté pan over medium heat and sauté all the above ingredients for 3 minutes.
  6. Add 7 halved cherry tomatoes and sauté for another minute. Finish by adding chopped cilantro, zest, and juice of a small lime.
  7. Mix all ingredients together, turn off the burner, and cover the pan to keep the heat. Set aside until the chicken is cooked and ready to serve. Reheat to your desired temperature.

Some Like It Hot Chicken

  1. To marinate the cut-up chicken, put it into a dish and pour in ¼ cup of hot sauce, such as Tapatio. Let it sit in the sauce for about 2 minutes, then sprinkle it with salt and pepper to your liking.
  2. Heat up a sauté pan on medium heat and add about a tablespoon of olive oil. Once the pan is hot, add the chicken and the rest of the ingredients from the recipe. Cook the chicken thoroughly on both sides.
  3. For dipping, serve with your preferred sauce, such as blue cheese or ranch.
