Grilled Chicken Salad with Grapes and Walnuts

  • 1.5 Cups grilled chicken chopped
  • 2 Scallions chopped with green cut into 1/4" pieces
  • ¼ Cup celery cut into 1/4" pieces
  • Zest of juice of 1 lime
  • ⅛ Cup chopped walnuts
  • Handful of red grapes halved
  • ⅛ Cup mayonnaise
  • 1.5 Tablespoons whole-grain mustard
  • ⅛ Teaspoon garlic powder
  • 3 Stems of parsley chopped finely
  • Salt and pepper to taste

Preparation - 10 minutes Cook Time - 0 minutes Serving - 4-6

  1. In a large bowl, combine all the above-mentioned ingredients and mix thoroughly. Place the mixture in the refrigerator for approximately twenty minutes to allow the flavors to meld together.
  2. After removing it from the refrigerator, stir the mixture to ensure all the flavors are well blended. Taste the mixture and adjust the seasoning if needed.
